Bring to temperature
Remove the A5 Wagyu ribeye from refrigeration 45–60 minutes before cooking (depending on thickness) and let rest on a plate, loosely tented with foil, until it reaches near room temperature. This promotes even cooking.

Pat dry and season
Pat the steak thoroughly dry with paper towels on all sides. Even a small amount of surface moisture will prevent a proper sear. Generously season both sides and the edges with kosher or fine sea salt (use roughly 1–2 tsp total for a 12–16 oz steak; adjust for size). Lightly coat with freshly ground black pepper to taste. Because A5 Wagyu is extremely rich, seasoning should be confident but not overpowering.

Render fat & sear (if thick cap of fat exists)
If the ribeye has a substantial external fat cap or thick edge fat, start by holding the steak with tongs and rendering that fat against the hot pan for 1–2 minutes, rotating to brown and render evenly. Tilt the pan slightly and spoon rendered fat over the surface. This step builds flavor and helps searing.

Sear the steak
Lightly oil the pan with 1–2 tbs of neutral oil (swipe with a paper towel to distribute). Place the steak in the hot pan and press gently to ensure contact. For A5 Wagyu, sear quickly to preserve the delicate fat: about 60–90 seconds per side for a 1–1.25 inch thick steak to reach rare to medium-rare internal temperature (target 115–120°F / 46–49°C for rare; carryover will rise). If your steak is thicker (1.5–2 inches), sear 90–120 seconds per side, and you may need to finish in a 350°F (175°C) oven for a few minutes—see next step. Avoid overcooking; A5 is best rare to medium-rare.

Optional oven finish (for thicker steaks)
If the steak is very thick and the crust is formed but the internal temperature is below target, transfer the skillet to a preheated 350°F (175°C) oven for 3–6 minutes while monitoring temperature with an instant-read thermometer. Remove when 5–7°F (3–4°C) below desired final temp to allow carryover.

Baste with butter and aromatics
Return the pan to medium heat (or remove from oven if used). Add unsalted butter, rosemary/thyme sprigs, and smashed garlic to the pan. As the butter melts and foams, tilt the pan and spoon the butter over the top of the steak repeatedly for 20–45 seconds. This adds flavor and gloss to the crust. For very thin steaks, skip extended basting to avoid overcooking.

Rest the steak
Transfer the steak to a cutting board and loosely tent with foil. Rest for 6–10 minutes (shorter for thinner cuts, longer for thicker). Resting lets juices redistribute and finish carryover cooking.

Slice and season
Uncover and, using a very sharp knife, slice the steak against the grain into 1/4–1/2 inch thick slices. Arrange on a warmed plate. Sprinkle a small pinch of flaky finishing salt over each slice to enhance flavor; add freshly ground pepper if desired.

Optional garnish and serve
Garnish with microgreens or chopped chives for color. Serve immediately with lemon wedges on the side if you want a subtle bright contrast. Because A5 Wagyu is intensely marbled and rich, serve modest portions (2–3 slices per person) alongside simple sides (steamed rice, plain potato, or lightly dressed salad) to complement the beef.
