Rice & Dolsot (hot stone bowl)

Prepare rice
Rinse 2 cups short-grain rice under cold water until the water runs almost clear. Drain. Combine rinsed rice with 2.2 cups water in a rice cooker or pot and cook according to manufacturer instructions (rice cooker) or bring to a boil then cover and simmer 12–15 minutes then rest 10 minutes off heat.

Season and heat the dolsot
While rice cooks, heat the dolsot (stone bowl) over medium heat for 5 minutes until warm but not cracking. Add 1 tablespoon neutral oil and spread around the interior with a heatproof brush or paper towel (use tongs) to create a light oil layer; this helps form the crisp rice crust (nurungji). If you don’t have a dolsot, a heavy cast-iron bowl/skillet is acceptable — preheat and oil similarly.

When rice is done, fluff with a rice paddle. Immediately transfer the hot cooked rice into the preheated dolsot, pressing gently to fill the bowl evenly. Set bowl back on low heat on the stovetop for 2–3 minutes to encourage a thin crust to form on the bottom. Turn off heat and cover while you assemble toppings.

Spinach
Blanch 1 cup baby spinach in boiling water for 20–30 seconds until wilted. Drain and plunge into ice water to stop cooking. Squeeze out excess water, then season with 1/2 teaspoon sesame oil and a pinch of salt. Keep warm or at room temperature.

Bean sprouts
Blanch soybean sprouts for 2–3 minutes until tender-crisp. Drain, cool briefly, and toss with 1/2 teaspoon sesame oil, a pinch of salt and a few sesame seeds.

Cucumber and carrot
For cucumber: lightly salt 1/2 cup julienned cucumber and let sit 5 minutes, then squeeze out excess water. For carrot: stir-fry julienned carrot in 1 teaspoon neutral oil over medium-high heat for 1–2 minutes with a pinch of salt until just softened. Keep both at room temperature.

Shiitake mushrooms
Sauté 1/2 cup sliced shiitake mushrooms in 1 teaspoon sesame oil over medium heat until softened and browned, about 3–4 minutes. Season lightly with salt and set aside.

Kimchi (optional)
If using halal-certified kimchi, drain excess liquid and chop into bite-sized pieces. If avoiding fermented pork-based kimchi, substitute with quick-pickled vegetables for a tangy element.

Prepare beef
Keep the Wagyu chilled until ready to use. Very finely julienne or mince 0.3 kg of Wagyu with a very sharp knife. Pat dry with paper towel to remove surface moisture; cold, dry meat mixes better and maintains texture.

Make yukhoe seasoning
In a chilled bowl combine 3 tbs soy sauce, 2 tbs sesame oil, 2 tbs gochujang (or 1–2 tbs if you prefer milder), 1 tbs toasted sesame seeds, 1 tbs grated pear (optional), 1 tsp minced garlic, 1 tsp sugar, 1 tbs finely sliced green onion, 1/2 tsp salt and 1/2 tsp freshly ground black pepper. Taste and adjust balance: more soy for saltiness, more pear or sugar for sweetness, more gochujang for heat.

Season the beef
Gently fold the beef into the seasoning until evenly coated. Mix minimally to avoid warming the meat; keep chilled. Plate the seasoned beef onto a serving dish or keep refrigerated briefly while the dolsot and rice are prepared.

With the rice in the hot dolsot, arrange the prepared spinach, soybean sprouts, cucumber, carrot, shiitake mushrooms, kimchi (if using) and roasted seaweed in sections over the rice to form a colorful ring, leaving the center for the yukhoe. This traditional layout gives a classic bibimbap presentation.

Remove the seasoned Wagyu from the fridge and place the yukhoe mound in the center of the bowl. Carefully place the reserved raw egg yolks on top of the yukhoe (one yolk per serving). Drizzle 1 teaspoon toasted sesame oil around and sprinkle additional sesame seeds and sliced scallions. Serve extra gochujang on the side for diners to add to taste.

To eat: mix everything vigorously in the dolsot so the hot rice crisps combine with the cool yukhoe and egg yolk, creating a warm, silky texture. If you prefer the beef warmed, briefly stir it into the hot rice to take the chill off, or spoon some rice over the beef so residual heat warms it slightly.

Serve immediately while the dolsot is sizzling and rice crust is crisp. Provide spoons and chopsticks for guests.
