Beef and Marinade

Prepare the beef
Trim excess fat from the top sirloin and cut into 1-inch (2.5 cm) uniform cubes so they cook evenly. Pat the beef dry with paper towels.

Make the marinade
In a large bowl, whisk together the yogurt, lemon juice, minced garlic, grated ginger, ground cumin, ground coriander, smoked paprika, black pepper, kosher salt, and 2 tablespoons olive oil until smooth.

Marinate
Add the beef cubes to the marinade and toss to coat thoroughly. Cover and refrigerate for at least 2 hours and up to 8 hours (for best tenderness). If short on time, allow a minimum of 30 minutes.

Bring to room temperature
Remove the marinated beef from the refrigerator 30 minutes before cooking so it comes closer to room temperature for even searing.

Sear the beef
Working in a single layer (cook in batches if necessary to avoid overcrowding), add beef cubes to the hot pan, spacing them so they sear rather than steam. Sear without moving for 2 minutes to form a crust, then flip and sear the second side for 1.5โ2 minutes for medium-rare to medium doneness depending on cube size. Total sear per batch ~4 minutes. Transfer seared beef to a warm plate and continue with remaining beef.

Finish with butter and herbs
Reduce heat to medium-low. Add the remaining 1 tablespoon olive oil and 2 tablespoons unsalted butter to the pan. Once butter melts, return all seared beef to the pan, toss briefly to coat and heat through (about 1 minute). Stir in chopped parsley and optional mint, coating the beef. Taste and adjust seasoning with additional salt and pepper if needed.

Rest and serve
Let the beef rest for 3 minutes to redistribute juices. Serve immediately with lemon wedges for squeezing over the beef. Accompany with steamed basmati rice or warm flatbreads and a mixed salad if desired.
