Prepare eggplants
Wash the eggplants and trim the stems. Slice each eggplant lengthwise into 1/2-inch (about 1.2 cm) thick slabs. If the eggplants are large, you can also cut them into 1/2-inch rounds. Lightly score the flesh in a crosshatch pattern about 1/4 inch deep; this helps the marinade and heat penetrate.

Salt and sweat
Arrange sliced eggplant on a tray and sprinkle both sides lightly with the kosher salt. Let rest for 10–15 minutes to draw out excess moisture (this reduces bitterness and helps texture). Pat dry with paper towels before cooking.

Pan-grill eggplant
Place eggplant slices in the hot skillet in a single layer (work in batches if needed). Cook without moving for 3–4 minutes until deeply golden and charred in spots. Flip and cook the other side 2–3 minutes until tender and cooked through. If the pan becomes dry, brush a little more oil. Transfer cooked eggplant to a plate and keep warm.
Gangdoenjang (sauce)

Make the sauce
In a small bowl, combine 2 tablespoons doenjang, 1 teaspoon gochujang (if using), 3 tablespoons water, 1 teaspoon sesame oil, 1 teaspoon rice vinegar, 1 teaspoon sugar, and 1 teaspoon finely minced garlic. Whisk until smooth and slightly diluted. Adjust water to achieve a spoonable, slightly thick but pourable consistency.

Finish sauce
Stir in 1 tablespoon finely sliced green onion and 1 teaspoon toasted sesame seeds. Taste and adjust balance: add a touch more sugar if too salty, a little more vinegar for brightness, or extra water to thin.

Warm (optional)
For a warmer, melded sauce, gently warm the mixture in a small saucepan over low heat for 1–2 minutes, stirring—do not boil. Remove from heat and keep warm.
Assembly & Garnish

Arrange the grilled eggplant slices on a serving platter, slightly overlapping if desired.

Spoon or brush the gangdoenjang sauce generously over each eggplant slice so the sauce seeps into the scored flesh. Use about half the sauce first, then add more to taste.

Drizzle the finishing 1/2 teaspoon sesame oil over the dressed eggplant, sprinkle the optional thinly sliced chili for color and heat, and garnish with an additional pinch of toasted sesame seeds and a few more sliced green onions if you like.

Serve immediately as a warm vegetable banchan (side) or as a main for a light vegetarian meal with steamed rice.
