Buckwheat Noodles & Toppings

    Prepare vegetables and fruit

    Peel (if desired) and julienne the cucumber into matchsticks to make about 1 cup. Core and julienne the Korean pear into about 1/2 cup. Thinly slice scallions. If using kimchi, chop it and press out excess liquid in a sieve or between paper towels.

    Cook noodles

    Bring a large pot of water to a rolling boil. Add the buckwheat noodles and cook according to package instructions (typically 3–5 minutes) until just tender. Stir gently to prevent sticking. Taste to confirm doneness — noodles should be slightly chewy.

    Shock and cool

    Immediately drain the noodles in a colander and rinse under very cold running water, massaging gently to remove surface starch and to cool them. Continue until noodles are thoroughly cold. Transfer to a bowl of ice water briefly (30–60 seconds) if you want them extremely cold. Drain well and shake off excess water.

    Toss the cooled noodles lightly with 1 teaspoon toasted sesame oil to prevent sticking and to add fragrance.

Chili-Vinegar Sauce (Mul Makguksu style — spicy, tangy)

    Make the sauce

    In a medium bowl, combine gochugaru, rice vinegar, soy sauce, sesame oil, sugar, minced garlic, and optional gochujang. Whisk together while gradually adding the 60 ml cold water until you have a pourable, slightly thickened sauce. Taste and adjust: add up to 1/2 tsp more sugar if too tart, or 1/4–1/2 tsp more salt if needed. The sauce should be bright, tangy, and moderately spicy.

Broth / Cold Stock (Optional — for mul-style service)

    If serving mul (soup) style: chill the vegetable stock well in the refrigerator. When ready to serve, add a few ice cubes to the stock to keep it very cold (do not fully dilute). Taste and adjust seasoning with a pinch of salt if needed. For bibim (dry) style, omit the cold stock and use a slightly thicker sauce (reduce water by 15–30 ml).

Assemble & Garnish

    Plate the noodles

    Divide the drained, seasoned (with sesame oil) noodles between 2–3 serving bowls (serves 3). Arrange cucumber and Korean pear julienne on top of each nest of noodles. Add a spoonful of chopped kimchi to one side if using, and sprinkle sliced scallion and toasted sesame seeds over each bowl.

    Finish with sauce or broth

    For mul-style: spoon 200 ml of the chilled vegetable stock into each bowl so noodles are submerged but still visible; then drizzle 1–2 tablespoons of the chili-vinegar sauce over the noodles (taste and add more sauce to preference). For bibim (dry) style: pour 2–3 tablespoons of the sauce over noodles and toss thoroughly to coat; add additional sauce to taste.

    Garnish each bowl with an optional sliced hard-boiled egg and a final tiny drizzle (about 1/4 tsp) of toasted sesame oil. Serve immediately with extra gochugaru and vinegar at the table if desired.
