Method

Marinated Beef (Bulgogi)

    Prepare marinade

    In a large bowl combine 4 tbsp soy sauce, 2 tbsp brown sugar, 1 tbsp mirin, 1 tbsp sesame oil, minced garlic, grated ginger, grated pear, sliced green onion, 1/2 tsp black pepper and gochugaru (if using). Stir until sugar dissolves.

    Marinate beef

    Add the thinly sliced beef to the marinade and toss thoroughly so every piece is coated. Cover and refrigerate for at least 30 minutes, ideally 1–2 hours. If short on time, 15–20 minutes still adds flavor.

Vegetables & Rice

    Prep vegetables

    Julienne the carrot and zucchini and slice mushrooms. Blanch bean sprouts and spinach separately in boiling water for 30–60 seconds, then drain and squeeze out excess water. Season the blanched spinach and bean sprouts lightly with a pinch of salt and a drop of sesame oil if desired.

    Heat rice

    If rice is already cooked and slightly cooled, reheat briefly by sprinkling a few tablespoons of water over it and microwaving or steaming until hot and fluffy. Keep rice covered and warm until plating.

Sauce & Stir-fry

    Make stir-fry seasoning

    Mix 1 tbsp soy sauce, 1 tsp sesame oil, 1/2 tsp sugar (or honey), and 1/4 tsp black pepper in a small bowl. This will adjust seasoning while stir-frying vegetables and rice.

    Cook beef

    Heat a large skillet or wok over high heat. Add 1 tbsp vegetable oil and swirl. Add the marinated beef in a single layer (work in batches to avoid crowding). Stir-fry 2–4 minutes until beef is browned and just cooked through. Remove beef to a plate and reserve juices in the pan.

    Stir-fry vegetables

    Add remaining 1 tbsp oil to the hot pan. Add carrots and mushrooms first and stir-fry 1–2 minutes, then add zucchini and continue 1–2 minutes until vegetables are tender-crisp. Return beef and any accumulated juices to pan. Pour the stir-fry seasoning over everything and toss to coat for 1 minute. Taste and adjust salt or soy if needed.

Assemble Bokkeum Bap (Stir-fried Rice Bowl)

    Combine rice and stir-fry

    Add the hot cooked rice (4 cups) to the beef and vegetable mixture in the pan. Using a spatula, break up any clumps and fold rice into the mixture until evenly combined and heated through, about 2–3 minutes. Press gently to get a little caramelization on the bottom if desired (like fried rice).

    Adjust seasoning

    Taste a small spoonful and adjust with additional soy sauce (up to 1 tbsp) or salt if necessary. If you like heat, stir in gochujang 1–2 tbsp to coat the rice evenly.

Eggs & Finishing

    Fry eggs

    In a separate nonstick skillet, heat a little oil over medium heat. Crack eggs and fry sunny-side up or to your preferred doneness (4 eggs for 4 servings). Season lightly with salt and pepper.

    Plate and garnish

    Divide the bulgogi bokkeum bap among 4 bowls. Top each bowl with a fried egg. Garnish with thinly sliced green onion and sprinkle sesame seeds. Serve immediately with kimchi and extra gochujang on the side.
