    Bring a large pot of water to a rolling boil. Add the buckwheat naengmyeon noodles and cook according to package instructions (usually 3–5 minutes) until just tender but slightly chewy.

    Reserve about 1/4 cup of the hot noodle water (optional) if you want to loosen the sauce later. Immediately drain the noodles in a colander and rinse thoroughly under cold running water to remove starch and stop cooking.

    Transfer rinsed noodles to a bowl of ice water with ice cubes and cold water for 1–2 minutes to chill and firm the texture. Drain well in a colander and set aside.

Bibim Sauce

    In a medium bowl, combine gochujang, gochugaru, rice vinegar, soy sauce, sesame oil, sugar, honey, minced garlic and toasted sesame seeds.

    Whisk the mixture until smooth. Add 1–2 tablespoons of water (or reserved hot noodle water) to thin the sauce to a glossy, spoonable consistency. Taste and adjust: add more vinegar for tang, more sugar or honey for sweetness, or more gochugaru for heat. The sauce should be spicy, slightly sweet, and bright.

Toppings

    Prepare the toppings while noodles cool: julienne the cucumber, thinly slice the Korean pear, chop kimchi if using, julienne pickled radish, and slice scallions.

    Peel and halve the hard-boiled eggs.

    If using chilled sliced beef, toss the slices with 1 tsp soy sauce and 1/2 tsp sesame oil to lightly season. If using warm cooked bulgogi, chill briefly so it doesn’t warm the noodles.

Assembly & Serve

    Divide the drained, chilled noodles among 2 large serving bowls (about 6 oz cooked noodles per serving).

    Add about half of the bibim sauce to each bowl (about 2 tbs sauce per serving) and toss the noodles thoroughly with tongs or chopsticks so every strand is coated. Add more sauce to taste.

    Arrange cucumber, pear, kimchi (if using), pickled radish and scallions on top of each pile of sauced noodles in separate sections for a traditional presentation.

    Top each bowl with a halved hard-boiled egg and the chilled sliced beef (if using). Drizzle a drop of toasted sesame oil and sprinkle extra sesame seeds and shredded gim over each bowl.

    Serve immediately. Encourage diners to mix everything together at the table so the sauce, toppings, and noodles combine. Provide extra vinegar, gochugaru, or sauce on the side if desired.
