    Prepare the Vegetables

    Chop the onion, mushrooms, and bell peppers into small pieces. Rinse the spinach and set aside.

    Cook the Meats

    In a skillet over medium heat, add the olive oil. Cook the bacon until crispy, then remove and drain on paper towels. In the same skillet, add the chicken-apple sausage and impossible sausage, cooking until browned. Remove from heat and chop into small pieces.

Cooking the Omelette

    Sauté the Vegetables

    In the same skillet, add the chopped onions, bell peppers, and mushrooms. Sauté for about 5 minutes until they become tender. Add spinach and cook until wilted, about 1 minute. Season with salt and pepper.

    Whisk the Eggs

    In a bowl, crack the three eggs and whisk them together until well combined. Season with a pinch of salt and pepper.

    Combine Ingredients

    Add the sautéed vegetables and cooked meats to the bowl with the whisked eggs. Mix in the diced American, cheddar, goat, and feta cheeses.

    Cook the Omelette

    Pour the egg mixture back into the skillet over medium heat. Cook for about 3-4 minutes until the edges start to set. Use a spatula to gently lift the edges and let any uncooked egg flow underneath.

    Finish Cooking

    Once the top is still slightly runny, fold the omelette in half and let it cook for another minute or until fully set. Slide onto a plate and serve hot.
