For the Chocolate Lava Cake
For Serving
Method
Preparing the Chocolate Lava Cake
Melt Chocolate and Butter
In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a double boiler or in the microwave in 30-second intervals, stirring until smooth.
Mix Sugar and Eggs
In a separate bowl, whisk together the granulated sugar, eggs, and egg yolks until well combined. Add the vanilla extract and a pinch of salt.
Combine Mixtures
Slowly pour the melted chocolate mixture into the egg mixture, whisking constantly until fully combined.
Add Flour
Sift the tablespoon of flour over the chocolate mixture and fold it in gently until just combined.
Fill Ramekins
Divide the batter evenly among the prepared ramekins, filling each about 2/3 full.
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is soft.
Cool Slightly
Remove the ramekins from the oven and let them cool for 1 minute.
Invert and Serve
Carefully run a knife around the edge of each ramekin, then invert onto a plate. Serve immediately with vanilla ice cream.
For Serving
Add Ice Cream
Place 2 scoops of vanilla ice cream next to the inverted lava cake on each plate.
Garnish
Sprinkle powdered sugar over the lava cake and add fresh berries if desired for an extra touch.
