Chocolate Mousse Preparation
1. Melt the Chocolate
In a heatproof bowl, combine the semisweet chocolate chips and unsalted butter. Place the bowl over a pot of simmering water (double boiler method) and stir until the chocolate and butter are completely melted and smooth. Remove from heat and let it cool slightly.
2. Whisk the Eggs
In a separate bowl, whisk the large eggs with granulated sugar until the mixture becomes pale and slightly thickened, about 3-4 minutes.
3. Combine Mixtures
Once the chocolate mixture is cooled slightly, stir in the vanilla extract. Gradually fold in the egg mixture into the chocolate until well combined.
4. Whip the Cream
In another bowl, beat 1 cup of heavy cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until no white streaks remain.
5. Chill the Mousse
Spoon the mousse into serving dishes and refrigerate for at least 2 hours, or until set.
Whipped Cream Topping Preparation
6. Prepare Whipped Cream
In a clean mixing bowl, beat 1 cup of heavy cream until soft peaks form. Gradually add powdered sugar and vanilla extract, then continue to beat until stiff peaks form.
7. Top the Mousse
Once the mousse is set, pipe or dollop the prepared whipped cream on top of each mousse serving.
