    Prepare the Ingredients

    Slice the mushrooms and onion. Season the New York strip steaks with salt and black pepper.

    Cook the Bacon

    In a large skillet, cook the bacon over medium heat until crispy. Remove and set aside, leaving the drippings in the pan.

    Sauté the Vegetables

    Using the same skillet with bacon drippings, add olive oil if needed. Sauté the sliced onions until translucent, then add the mushrooms. Cook until browned and tender. Season with salt and black pepper to taste.

Cooking the Steak and Eggs

    Cook the Steak

    In the same skillet, increase the heat to high and cook the seasoned New York strip steaks for about 4-5 minutes on each side for medium-rare, or until your desired doneness. Remove from skillet and let rest for a few minutes.

    Poach the Eggs

    In a pot of simmering water, add a splash of vinegar. Crack each egg into a small bowl, then gently slide into the water. Poach for about 3-4 minutes or until the whites are set but yolks are still runny. Remove with a slotted spoon.

Assembly

    Toast the Bread

    While the eggs are poaching, toast the slices of country white bread until golden brown.

    Plate the Dish

    On each plate, place a slice of toasted bread, top with sautéed mushrooms and onions, add the steak slices, and then place the poached eggs on top. Drizzle with bordelaise sauce and garnish with crispy bacon.
