Prepare the Grits

Cook the Shrimp

Sauté the Shrimp
In a large skillet, heat 2 tbs of olive oil over medium-high heat. Add 3 minced garlic cloves and sauté for about 30 seconds until fragrant.

Season and Cook
Add 1 lb of peeled and deveined shrimp to the skillet along with 2 tbs of Cajun seasoning. Cook for about 3-5 minutes, stirring occasionally, until the shrimp turn pink and are cooked through.

Finish with Lemon Juice and Green Onions
Remove from heat and stir in 2 tbs of lemon juice and the chopped green onions. Set aside.
Prepare the Eggs

Cook the Eggs
In the same skillet used for the shrimp, add 1 tbs of butter and heat over medium heat. Crack 4 large eggs into the skillet and season with salt and black pepper to taste.

Fry to Desired Doneness
Cook the eggs for about 3-4 minutes for sunny-side-up, or longer if you prefer them over-easy or over-medium.
Assembly

Plate the Dish
To serve, spoon a generous portion of the cheesy grits onto each plate. Top with the sautéed shrimp and finish with a fried egg on top. Garnish with additional chopped green onions if desired.
