    Prepare the Portobello Mushrooms

    Clean the portobello mushrooms with a damp cloth. Remove the stems and gills if desired.

    Marinate the Mushrooms

    In a bowl, mix olive oil, salt, and black pepper. Brush this mixture over the portobello mushrooms and let them marinate for about 15 minutes.

Grilling

    Grill the Mushrooms

    Preheat your grill to medium-high heat. Place the marinated portobello mushrooms on the grill and cook for 5-7 minutes on each side, or until tender and juicy.

Assembly

    Toast the Brioche Buns

    While the mushrooms are grilling, cut the brioche buns in half and toast them lightly on the grill until golden brown.

    Assemble the Porto Romesco

    Spread a layer of tapenade on the bottom half of each toasted brioche bun. Place the grilled portobello mushroom on top, followed by roasted red peppers, Kalamata olives, crumbled goat cheese, arugula, and a generous spoonful of romesco sauce.
