Method
Brining Chicken

Prepare the Brine
In a large pot, combine water, salt, brown sugar, garlic cloves, black peppercorns, thyme, and bay leaves. Stir until salt and sugar are dissolved.

Brine the Chicken
Submerge the chicken halves in the brine. Cover and refrigerate for at least 4 hours or overnight for best results.
Roasting Chicken

Preheat the Oven
Preheat your oven to 425°F (220°C).

Season the Chicken
Remove chicken from brine, rinse under cold water, and pat dry. Rub olive oil and Peruvian spice blend all over the chicken.

Roast the Chicken
Place the chicken halves on a roasting pan and roast in the preheated oven for about 50-60 minutes, or until the internal temperature reaches 165°F (74°C).
Cooking Rice & Beans

Cook Rice
Add white rice and chicken broth to the saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for about 18-20 minutes, or until rice is cooked.

Add Beans
Once rice is cooked, fold in the canned black beans and chopped cilantro. Cook for an additional 5 minutes.
Frying Plantains

Prepare Plantains
Peel the ripe plantains and slice them diagonally into 1-inch thick pieces.

Fry Plantains
In a skillet, heat vegetable oil over medium heat. Fry plantain slices until golden and crispy, about 3-4 minutes per side. Drain on paper towels.
Making Citrus Pico

Combine Ingredients
In a bowl, mix diced tomatoes, red onion, lime juice, and chopped cilantro. Stir well and set aside to let flavors meld.
Preparing Pio Pio Sauce

Mix the Sauce
In a bowl, combine mayonnaise, aji amarillo paste, and lemon juice. Stir until well combined and smooth.
