Prepare the Pernil
If using pre-cooked Pernil, shred or slice it into bite-sized pieces. If cooking from scratch, roast a seasoned pork shoulder at 325°F (160°C) for 4-5 hours until tender, then shred.

Assemble the Sandwich
Slice the Cuban bread rolls in half. Spread 1 tablespoon of whole grain honey mustard on each half. Layer the bottom half with 1/2 cup of Pernil, 2 slices of ham, and 1 slice of Swiss cheese. Close the sandwich.

Make the Pickles
Slice the cucumbers into thin rounds. In a bowl, combine salt, sugar, white vinegar, and water, stirring until dissolved. Add the cucumber slices to the mixture and let sit for at least 30 minutes in the refrigerator.
Cooking and Serving

Grill the Sandwich
Heat a panini press or skillet over medium heat. Place the assembled sandwich on the press or skillet and grill for 3-4 minutes on each side until the bread is crispy and the cheese is melted.

Serve the grilled sandwich with house-made pickles on the side and your choice of fries, side salad, or fruit.
