Cake Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C) and grease three 9-inch round cake pans.

Mix Dry Ingredients
In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt.

Combine Mixtures
Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Stir in the boiling water until smooth.

Bake the Layers
Divide the batter evenly among the three prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.

Cool the Cakes
Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then, transfer to wire racks to cool completely.
Berry Coulis Preparation

Prepare the Coulis
In a small saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. Cook until the berries are soft and the sugar is dissolved, about 5-7 minutes.

Blend the Coulis
Remove from heat and blend the mixture until smooth. Strain if desired to remove seeds. Let it cool.

Whip the Cream
In a large bowl, beat the heavy cream, powdered sugar, and vanilla extract with an electric mixer until stiff peaks form.
Assemble the Cake

Layer the Cakes
Once the cakes are completely cooled, place one layer on a serving plate. Spread a layer of whipped cream on top, followed by some berry coulis.

Repeat Layers
Add the second cake layer and repeat the process. Finally, top with the last cake layer.

Decorate the Cake
Spread whipped cream over the top and sides of the cake. Decorate with fresh berries and drizzle with remaining berry coulis.
