Method
For the Chicken Filling
- 1
Cook the Chicken Filling
In a large skillet, heat a tablespoon of oil over medium heat. Add the finely chopped onion and sauté until translucent.
- 2
Add Aromatics
Stir in the minced garlic, grated ginger, and green chili. Sauté for about 2 minutes until fragrant.
- 3
Add Chicken and Spices
Add ground chicken to the skillet and cook until browned. Stir in cumin, coriander, garam masala, salt, and black pepper. Cook for another 5-7 minutes until chicken is cooked through.
- 4
Finish with Fresh Herbs
Remove from heat and stir in chopped cilantro. Let the filling cool before using.
For the Dough
- 5
Prepare the Dough
In a large bowl, combine all-purpose flour and salt. Add the oil and mix well.
- 6
Knead the Dough
Gradually add water, kneading until a smooth and soft dough forms. Cover with a damp cloth and let it rest for 30 minutes.
For the Dipping Sauce
- 7
Assembling and Frying the Samosas
- 8
Roll Out the Dough
Divide the rested dough into small balls. Roll each ball into a thin oval shape.
- 9
Form the Samosas
Cut the rolled dough in half to form two semi-circles. Take one semi-circle, fold it into a cone shape, and seal the edge with a little water. Fill the cone with chicken filling and seal the open edge to form a triangle.
- 10
Fry the Samosas
Heat oil in a deep pan over medium heat. Once hot, gently add the samosas in batches and fry until golden brown and crisp. Drain on paper towels.
- 11
Serve
Serve hot with the ginger-lime yogurt dipping sauce.
