    Marinate the Chicken

    In a large bowl, combine olive oil, minced garlic, lemon juice, salt, pepper, and chopped fresh herbs. Add the chicken breasts, ensuring they are fully coated. Cover and refrigerate for at least 1 hour, or overnight for maximum flavor.

    Prepare the Rice

    In a medium saucepan, bring chicken broth to a boil. Add rice, stir, and reduce heat to low. Cover and simmer for about 18-20 minutes or until rice is tender and liquid is absorbed. Remove from heat and let sit covered for an additional 5 minutes.

    Cook the Chicken

    Preheat the grill or oven to 375°F (190°C). Remove chicken from marinade and grill for 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C).

    In a large skillet over medium heat, add a drizzle of olive oil. Add the mixed vegetables and sauté for about 5-7 minutes until tender but still crisp. Season with salt and pepper to taste.
