Preparation of Ingredients

Prepare Sushi Rice
Rinse 1 cup of sushi rice under cold water until the water runs clear. Cook the rice according to package instructions, typically using 1 1/4 cups of water for each cup of rice. Once cooked, let it cool to room temperature.

Prepare Ahi Tuna
Dice 1 lb of fresh Ahi tuna into bite-sized cubes. Place the diced tuna into a medium-sized bowl.

Make Honey Wasabi Aioli
In a small bowl, combine 1 tbs of honey, 1 tsp of wasabi paste, and 2 tbs of mayonnaise. Mix until well combined and smooth. Set aside.

Combine Tuna with Seasoning
Add the tuna into the bowl and drizzle with 2 tbs of chili vinaigrette. Gently toss to coat the tuna evenly with the vinaigrette.

Assemble the Poke Bowl
In a serving bowl, layer the cooled sushi rice as the base. Top with the seasoned Ahi tuna, diced avocado, sliced cucumber, and a sprinkle of tobiko. Drizzle the honey wasabi aioli on top.
