Sauce Preparation
Make the Cumin-Chipotle Sauce
In a small bowl combine mayonnaise, crema (or sour cream), finely chopped chipotle in adobo, ground cumin, smoked paprika, minced garlic, lime juice, honey, salt, and black pepper. Whisk until smooth. Taste and adjust heat or sweetness—add more chipotle for heat or more honey for balance. Refrigerate while preparing the fire and oysters to let flavors meld (at least 10 minutes).
Prepare Fire and Oysters
Build an open hardwood fire or burn lump charcoal until you have a steady bed of hot coals with moderate flames. Let flames die back slightly so oysters cook by radiant heat and searing embers rather than large roaring flames. This should take about 20–30 minutes depending on setup.
While fire is coming up, scrub oyster shells under cold running water with a stiff brush to remove grit. Discard any oysters with broken shells or that do not close when tapped.
Shuck careful option: For whole oysters on the half-shell using a grill grate you can roast them whole (closed) to loosen the adductor then open after cooking, or shuck beforehand. To partially shuck before cooking: insert oyster knife at hinge, twist to pop open, cut the muscle to free the top shell, leave oyster in bottom shell with liquid intact. Place top shell aside. If you prefer to roast fully closed, proceed to next step; after roasting open with towel and knife.
Roasting Oysters
Arrange a layer of crushed ice on a platter to create a stable bed for serving. Keep aside.
When coals are at steady high heat but not overwhelmingly flaming, place a clean grill grate over the fire. Position oysters (either whole or on half-shell) on the grate so they sit level. If oysters are whole/closed, place them cup-side down to retain liquid.
Roast oysters for 6–10 minutes. Look for signs: shells will begin to open slightly and edges will brown; if shucked, the oyster flesh will firm and develop light char marks. Timing depends on oyster size and heat intensity—check after 6 minutes and continue until done but not rubbery.
If oysters were left closed, carefully remove with tongs and open with an oyster knife or towel — the juices will be hot. If shucked before cooking, remove directly from grate.
Finish and Plate
Spoon about 1 tsp of the cumin-chipotle sauce over each oyster, or serve sauce on the side for guests to add to taste.
Garnish oysters with a light sprinkle of chopped cilantro and serve on the bed of crushed ice with lime wedges on the side. Serve immediately while hot.
