Brisket Preparation

    Season the Brisket

    Rub the beef rub seasoning all over the brisket, ensuring it is evenly coated. Wrap the seasoned brisket in plastic wrap and refrigerate for at least 4 hours or overnight for best flavor.

    Prepare the Smoker

    Soak the wood chips in water for at least 30 minutes. Preheat your smoker to 225°F (107°C). Once preheated, drain the wood chips and add them to the smoker.

    Smoke the Brisket

    Place the brisket in the smoker, fat side up. Smoke for approximately 1 hour per pound, or until the internal temperature reaches 195°F (90°C) for tender brisket. This should take about 4-6 hours.

    Rest the Brisket

    Once the brisket is done, remove it from the smoker and wrap it in foil. Let it rest for at least 30 minutes before slicing.

    Prepare the Coleslaw

    In a large bowl, combine the coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper. Toss well to combine. Chill in the refrigerator until ready to serve.

    In a saucepan, combine the baked beans, BBQ sauce, and any additional seasonings you prefer. Heat over medium heat until warmed through, about 10-15 minutes.

    Plate the Dish

    Slice the brisket against the grain into thin slices. Serve on a platter with coleslaw and baked beans on the side. Drizzle BBQ sauce over the brisket and garnish with chopped parsley.
