Method

Gravy

  1. 1

    Prepare the Roux

In a saucepan, add the turkey drippings and heat over medium heat until hot. Gradually whisk in the flour, stirring continuously for about 5 minutes until it forms a smooth paste.

  2. 2

    Add Broth

Slowly add the chicken broth, whisking constantly to prevent lumps. Bring to a simmer and cook for about 10 minutes, allowing it to thicken.

  3. 3

    Season

Add salt, black pepper, and fresh thyme to taste. Adjust seasoning if necessary.

Cornbread

  1. 4

    Preheat Oven

Preheat your oven to 400°F (200°C). Grease a baking dish or cast iron skillet.

  2. 5

    Mix Dry Ingredients

In a large bowl, combine the cornmeal, flour, baking powder, salt, and sugar.

  3. 6

    Combine Wet Ingredients

In another bowl, mix the milk, egg, and melted butter until well combined.

  4. 7

    Combine Mixtures

Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.

  5. 8

    Bake

Pour the batter into the greased baking dish and bake for 20-25 minutes, or until the top is golden brown.

Cranberry Sauce

  1. 9

    Combine Ingredients

In a saucepan, combine the fresh cranberries, sugar, water, orange zest, and cinnamon.

  2. 10

    Cook

Bring to a boil over medium heat, then reduce heat and simmer for about 10-15 minutes, until the cranberries burst and the sauce thickens.

  3. 11

    Cool and Serve

Remove from heat and let cool before serving. The sauce will thicken further as it cools.

House-made Desserts

  1. 12

    Preheat Oven

Preheat the oven to 350°F (175°C) and grease a baking pan.

  2. 13

    Mix Dry Ingredients

In a bowl, combine flour, sugar, baking powder, and salt.

  3. 14

    Combine Wet Ingredients

In another bowl, beat together the butter, milk, vanilla extract, and eggs until well mixed.

  4. 15

    Combine Mixtures

Gradually add the wet mixture to the dry mixture, stirring until just incorporated.

  5. 16

    Bake

Pour the batter into the greased pan and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
