Method

Preparation

  1. 1

    Prepare the Potatoes

Wash and peel the Russet potatoes. Cut them into thin, uniform strips to ensure even cooking.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes. This helps to remove excess starch and will make the fries crispier.

  3. 3

    Preheat the Oven

Preheat your oven to 425°F (220°C). This high temperature is essential for achieving crispy fries.

  4. 4

    Drain and Dry

After soaking, drain the potatoes and pat them dry with a clean kitchen towel to remove as much moisture as possible.

  5. 5

    Season the Potatoes

In a large bowl, toss the dried potato strips with olive oil, salt, black pepper, rosemary, and thyme until evenly coated.

  6. 6

    Bake the Fries

Spread the seasoned potatoes in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden brown and crispy.

  7. 7

    Add Parmesan

Remove the fries from the oven and immediately sprinkle with grated Parmesan cheese while they are still hot. Toss gently to ensure even coverage.
