Mostarda
Confit Walnuts
Brie Preparation
Method
Mostarda
- 1
Prepare the Mostarda
Peel, core, and dice the Asian pear into small cubes. In a saucepan, combine the diced pear, Dijon mustard, honey, white wine vinegar, sugar, and salt.
- 2
Cook the Mostarda
Cook on medium heat for about 10 minutes, stirring occasionally until the pears soften and the mixture has thickened slightly. Remove from heat and let cool.
Confit Walnuts
- 3
Prepare the Confit
In a small saucepan, combine the walnuts, olive oil, thyme, garlic cloves (smashed), and salt. Ensure the walnuts are fully submerged in oil.
- 4
Cook the Walnuts
Heat over low heat for about 30 minutes, stirring occasionally, until the walnuts are toasted and fragrant. Remove from heat and let cool in the oil.
Brie Preparation
- 5
Prepare the Brie
Preheat the broiler on high. Place the Brie cheese on a baking sheet lined with parchment paper. Sprinkle the top with sugar.
- 6
Broil the Brie
Broil the Brie for about 3-5 minutes, or until the sugar caramelizes and the cheese is warm and gooey. Keep a close eye to prevent burning.
- 7
Assemble the Dish
On a serving platter, place the warm Brie, spoon the Asian pear mostarda on top, and scatter the confit walnuts around. Garnish with fresh watercress and serve with grilled bread.
