Ribs Preparation

    Prepare the Ribs

    Preheat your smoker or oven to 225°F (107°C). Rub the pork ribs generously with the smoky spice rub, ensuring that all surfaces are coated.

    Add Vinegar

    Place the ribs in a large dish and drizzle with apple cider vinegar. Let them marinate for at least 30 minutes.

    Smoke the Ribs

    Place the ribs on the smoker or in the oven. If using a smoker, add wood chips for added flavor. Cook for approximately 3 hours, basting with barbecue sauce every hour.

    Finish the Ribs

    After 3 hours, increase the temperature to 300°F (150°C) and cook for an additional 30 minutes, applying more barbecue sauce as desired until ribs are tender.

Burnt Ends Preparation

    Prepare the Brisket

    Trim excess fat from the brisket and rub it with the smoky spice rub, ensuring even coverage. Let it rest for 30 minutes.

    Smoke the Brisket

    Place the brisket in the smoker at 225°F (107°C) and smoke for about 6-8 hours until it reaches an internal temperature of 190°F (88°C).

    Cube the Brisket

    Remove the brisket from the smoker and let it rest for 30 minutes. Cut the brisket into 1-inch cubes.

    Cook the Burnt Ends

    Place the brisket cubes in a baking dish and mix with barbecue sauce, honey, and apple cider vinegar. Cover with foil and return to the smoker or oven at 300°F (150°C) for 1-2 hours until tender.

    Remove burnt ends from the heat, let them cool slightly, and serve alongside the ribs for the ultimate plate.
