Preparation Instructions
- 1
Prepare the Turkey
Thaw the turkey if frozen. Remove the giblets and neck from the cavity and pat the turkey dry with paper towels.
- 2
Make the Rub
In a bowl, combine the olive oil, smoked paprika, garlic powder, onion powder, salt, black pepper, thyme, and rosemary. Mix well to form a paste.
- 3
Season the Turkey
Rub the seasoning paste all over the turkey, including under the skin and inside the cavity. Allow it to sit for at least 1 hour (or overnight in the fridge for best results).
- 4
Prepare the Smoker
Soak the wood chips in water for at least 30 minutes. Preheat the smoker to 225°F (107°C).
- 5
Smoke the Turkey
Place the soaked wood chips in the smoker box and put the turkey on the grates. Smoke the turkey for approximately 30-40 minutes per pound, or until the internal temperature reaches 165°F (74°C).
