Preparing the Meats

Marinate the Meats
In a large bowl, combine the BBQ rub, apple cider vinegar, and olive oil. Mix well. Add the brisket, pork shoulder, turkey breast, and sausage to the bowl, ensuring all meats are well coated with the marinade. Cover and let marinate in the refrigerator for at least 2 hours, preferably overnight.

Prepare Ribs or Burnt Ends (Optional)
If you're adding ribs or burnt ends, coat them with remaining BBQ rub and set aside to marinate.
Cooking the Meats

Smoke the Meats
Preheat your smoker to 225°F (107°C). Place the marinated brisket, pork shoulder, turkey breast, and sausage in the smoker. If you prepared ribs or burnt ends, add them as well. Smoke for about 6-8 hours, or until the internal temperature of the brisket reaches 195°F (90°C), pork shoulder reaches 195°F (90°C), turkey reaches 165°F (74°C), and sausage is cooked through.

Rest the Meats
Once cooked, remove the meats from the smoker and let them rest for at least 30 minutes before slicing. This allows the juices to redistribute.

Prepare Coleslaw
In a large bowl, mix together coleslaw mix with your favorite dressing or simply with mayonnaise, vinegar, sugar, salt, and pepper to taste. Chill in the refrigerator until ready to serve.
