    Prepare the Marinade

    In a bowl, combine the garlic powder, onion powder, paprika, salt, black pepper, olive oil, apple cider vinegar, honey, and soy sauce. Mix well until all ingredients are combined.

    Marinate the Pork

    Place the pork shoulder in a resealable plastic bag or a large bowl. Pour the marinade over the pork, ensuring it is well coated. Seal the bag or cover the bowl and refrigerate for at least 4 hours, preferably overnight.

Cooking

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Prepare the Vegetables

    If using, peel and chop the carrots, onions, and potatoes into large chunks.

    Arrange the Pork and Vegetables

    In a large roasting pan, place the marinated pork shoulder in the center. Surround it with the chopped vegetables.

    Roast the Pork

    Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for 3 to 4 hours, or until the pork is tender and easily pulls apart with a fork.

    Finishing Touch

    Remove the foil during the last 30 minutes of cooking to allow the pork to brown. Check the internal temperature; it should reach at least 190°F (88°C) for the best shredding results.

    Rest and Serve

    Once cooked, remove the pork from the oven and let it rest for 15-20 minutes before slicing or shredding. Serve with the roasted vegetables.
