    Begin by peeling the Russet potatoes. Cut them into uniform sticks, approximately 1/4 inch thick to ensure even cooking.

    Soak Potatoes

    Place the cut potato sticks in a large bowl of cold water. Soak for at least 30 minutes to remove excess starch, which helps make the fries crispier.

Cooking

    Heat Oil

    In a large, deep pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer to check the temperature accurately.

    Dry Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels. Ensure they are as dry as possible to prevent oil splatter.

    Fry Potatoes (First Fry)

    Carefully add the dried potato sticks to the hot oil in batches. Fry for about 4-5 minutes until they are pale and slightly soft but not browned. Remove and drain on paper towels.

    Increase the oil temperature to 375°F (190°C) for the second fry.
