Brisket

Burnt Ends

Beef Polish Sausage

Method

Brisket

  1. 1

    Prepare the Brisket

Preheat your smoker or oven to 225°F (107°C).

  2. 2

    Season the Brisket

Rub the beef brisket with salt, black pepper, garlic powder, onion powder, and smoked paprika evenly on all sides.

  3. 3

    Cook the Brisket

Place the brisket in the smoker or oven, fat side up, and cook until it reaches an internal temperature of 195°F (90°C), about 5-6 hours. Add beef broth to maintain moisture.

  4. 4

    Rest the Brisket

Remove the brisket from the heat and let it rest for at least 30 minutes before slicing.

Burnt Ends

  1. 5

    Prepare the Burnt Ends

Once the brisket is rested, cut a portion into 1-inch cubes.

  2. 6

    Season the Cubes

In a bowl, mix brown sugar, BBQ sauce, honey, and chili powder. Toss the brisket cubes in the mixture until coated.

  3. 7

    Cook the Burnt Ends

Place the cubed brisket on a baking sheet and return to the smoker or oven. Cook for an additional 1-2 hours until caramelized.

Beef Polish Sausage

  1. 8

    Cook the Sausage

Grill or pan-fry the beef Polish sausages over medium heat until browned and heated through, about 10-15 minutes.
