Method

Preparation

  1. 1

    Trim the Brisket

Trim excess fat from the brisket, leaving about 1/4 inch of fat for flavor and moisture.

  2. 2

    Season the Meat

Generously rub the beef rub all over the brisket, ensuring even coverage. Let it sit at room temperature for 30 minutes.

Cooking

  1. 3

    Preheat the Smoker

Preheat your smoker to 225°F (107°C).

  2. 4

    Smoke the Brisket

Place the brisket in the smoker and smoke for approximately 5-6 hours, or until it reaches an internal temperature of 195°F (90°C).

  3. 5

    Wrap the Brisket

Once the brisket reaches the desired temperature, wrap it in butcher paper or aluminum foil and return it to the smoker for another 1-2 hours.

  4. 6

    Cube the Brisket

Remove the brisket from the smoker and let it rest for 30 minutes. Cut the brisket into 1-inch cubes.

Sauce Preparation

  1. 7

    Mix the Sauce

In a bowl, combine the BBQ sauce, honey, apple cider vinegar, and Worcestershire sauce. Mix well.

Final Cooking

  1. 8

    Toss the Cubes in Sauce

Place the cubed brisket in a large bowl and pour the sauce over the top. Toss to coat the cubes evenly.

  2. 9

    Return to the Smoker

Return the coated cubes to the smoker and cook for an additional 30-45 minutes at 275°F (135°C) until they caramelize and develop a nice crust.

Serving

  1. 10

    Plate and Garnish

Remove the burnt ends from the smoker, place on a serving platter, and garnish with chopped green onions and sesame seeds, if using.
