Brisket Preparation

Season the Brisket
In a small bowl, mix together smoked paprika, garlic powder, onion powder, black pepper, salt, and brown sugar. Rub this mixture all over the beef brisket, ensuring it's well-coated.

Cook the Brisket
Smoke the brisket at 225°F (107°C) for about 1 to 1.5 hours per pound, or until it reaches an internal temperature of 195°F (90°C). Baste with beef broth and liquid smoke occasionally.

Rest the Brisket
Once cooked, remove the brisket from the smoker and let it rest for at least 30 minutes before slicing.
Pulled Pork or Chicken Leg Quarter Preparation

Prepare the Pork or Chicken
If using pork, rub it with smoked paprika, salt, and black pepper. If using chicken leg quarters, season them similarly.

Cook the Pulled Pork or Chicken
Place the pork shoulder or chicken leg quarters in a slow cooker or smoker. If using pork, cook on low for 8 hours or until it shreds easily with a fork. If using chicken, cook until the internal temperature reaches 165°F (74°C).

Mix with BBQ Sauce
Once cooked, shred the pork with two forks and mix it with BBQ sauce and apple cider vinegar. For chicken, brush with BBQ sauce before serving.
