Preparation

    Prepare the Vegetables

    Wash and peel the carrots, then chop them into large chunks. Clean and chop the celery stalks into similar-sized pieces. Peel and quarter the onion. Crush the garlic cloves lightly using the flat side of a knife.

    Prepare the Bones

    If using oxtail, cut the oxtail into smaller pieces for better extraction of flavor. If using marrow bones, ensure they are cut in half to expose the marrow.

    Combine Ingredients

    In a large stockpot, add the beef bones, chopped carrots, celery, onion, garlic, bay leaves, black peppercorns, and water. The water should cover the bones and vegetables completely.

    Bring to a Boil

    Heat the pot over medium-high heat until it reaches a boil. Once boiling, skim off any foam that rises to the surface to ensure a clear broth.

    Simmer

    Reduce the heat to low and cover the pot. Let the mixture simmer gently for at least 6-8 hours. The longer it simmers, the richer the flavor of the broth will be.

    Season the Broth

    Check the broth periodically and add salt to taste. Adjust seasoning as needed throughout the cooking process.

    Strain the Broth

    Once the broth has finished cooking, remove the pot from heat. Using a fine mesh strainer or cheesecloth, strain the broth into another large pot or bowl, discarding the solids.
