Prepare the Onions
Peel and slice the yellow onion into thin strips. Heat 1 tablespoon of butter in a skillet over medium heat. Add the onions and sprinkle with salt. Cook, stirring occasionally, until the onions are soft and caramelized, about 15-20 minutes.

Form the Patties
In a mixing bowl, combine the ground beef with black pepper. Form into two equal-sized patties, about 1/4 pound each.

Cook the Patties
In the same skillet used for the onions, add another tablespoon of butter and heat over medium-high heat. Once the butter is melted and bubbling, add the beef patties. Cook for about 3-4 minutes on one side, then flip and place a slice of Swiss cheese and a slice of American cheese on top of each patty. Cook for an additional 3-4 minutes until the cheese is melted and the burger is cooked to your desired doneness.

Assemble the Patty Melt
In a separate skillet, melt the remaining tablespoon of butter. Place two slices of pumpernickel bread in the skillet. On one slice, place the cooked beef patty with melted cheese, followed by a generous amount of caramelized onions. Top with the second slice of pumpernickel bread. Cook until the bread is golden brown, about 2-3 minutes per side, pressing down gently with a spatula.

Serve
Once the patty melt is golden and crispy on both sides, remove from the skillet and let it cool for a minute. Slice in half and serve hot with your choice of sides.
