Preparing the Quinoa

    Rinse the Quinoa

    In a fine-mesh strainer, rinse 1 cup of quinoa under cold running water for about 1-2 minutes to remove any bitterness.

    Cook the Quinoa

    In a medium saucepan, combine the rinsed quinoa and 2 cups of vegetable broth. Bring to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is fluffy and the liquid is absorbed.

Sautéing the Vegetables

    Chop the Vegetables

    Dice the red bell pepper and zucchini. Mince the garlic cloves.

    Sauté

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced red bell pepper and zucchini. Sauté for about 5 minutes until they begin to soften.

    Add Spinach and Garlic

    Add the minced garlic and spinach to the skillet. Cook for an additional 2-3 minutes until spinach is wilted.

Combining Ingredients

    Mix in Chickpeas and Spices

    Stir in 1 cup of rinsed chickpeas, 1 teaspoon of cumin, 1 teaspoon of paprika, 0.5 teaspoon of salt, and 0.5 teaspoon of black pepper. Cook for another 2-3 minutes, stirring occasionally.

    Add the cooked quinoa to the skillet and stir to combine everything thoroughly. Drizzle with 2 tablespoons of lemon juice and mix well.

    Fold in the crumbled feta cheese gently into the mixture. Allow it to warm for a minute before serving.
