Meat Selection
Marinade and Seasoning
Method
Preparation
- 1
Prepare the Meats
Select the meats for the raffle, ensuring a variety of options. Cut the beef brisket into manageable pieces, trim the pork ribs, and ensure the chicken thighs are deboned if necessary. Keep all meats refrigerated until marinating.
Marinating
- 2
Mix the Marinade
In a large bowl, combine olive oil, garlic powder, paprika, salt, black pepper, brown sugar, and apple cider vinegar. Stir well to create a marinade.
- 3
Marinate the Meats
Place each type of meat into separate resealable plastic bags. Pour the marinade evenly over the meats, seal the bags, and massage the marinade into the meat. Refrigerate for at least 4 hours, preferably overnight.
Cooking
- 4
Cook the Meats
Preheat your grill or smoker to medium heat. Remove the meats from the marinade and discard the marinade. Grill or smoke the beef brisket for 6-8 hours, pork ribs for 2-3 hours, chicken thighs for 30-40 minutes, and sausages for 15-20 minutes, or until they are cooked through and have a nice char.
- 5
Rest and Serve
Once cooked, let the meats rest for 10-15 minutes before slicing or serving. This allows the juices to redistribute. Arrange the meats on a platter and serve to participants of the raffle.
