Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash and peel the Russet potatoes. Cut them into even strips, about 1/4 inch thick.

Soak the Potatoes
Soak the cut fries in cold water for at least 30 minutes to remove excess starch. This helps achieve a crispier texture.

Baste with Garlic Olive Oil
While the fries are soaking, mince the garlic cloves and combine them with the olive oil in a small saucepan. Heat over low heat for about 5 minutes until fragrant. Strain the garlic from the oil.

Coat and Season the Fries
Drain the fries and pat them dry with paper towels. In a large bowl, toss the fries with the garlic-infused olive oil, salt, and black pepper until evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes, flipping halfway through, until golden and crispy.

Add Mozzarella Cheese
Remove the fries from the oven and sprinkle the mozzarella cheese evenly over the top. Return to the oven and bake for an additional 5-7 minutes, until the cheese is melted and bubbly.
