Fish Fillet Preparation

    Prepare the Coating

    In three separate shallow dishes, place the flour, beaten eggs, and bread crumbs. Season the flour with salt and black pepper.

    Coat the Cod Fillets

    Dip each cod fillet first into the flour, shaking off any excess, then into the beaten eggs, and finally into the bread crumbs, pressing gently to adhere. Set aside on a plate.

    Fry the Cod Fillets

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully add the breaded cod fillets. Fry for about 4-5 minutes on each side, or until golden brown and cooked through. Remove from the skillet and drain on paper towels.

    Prepare the Tomato

    Slice the large tomato into thin slices.

    Assemble the Sandwich

    On the bottom half of each burger bun, place a lettuce leaf, followed by a cooked cod fillet. Top each fillet with a slice of American cheese. If desired, place under the broiler for 1-2 minutes to melt the cheese.

    Finish the Sandwich

    Add 2-3 slices of tomato on top of the cheese, then spread a generous amount of tartar sauce on the top half of the burger bun. Close the sandwich and serve immediately.
