Method

Chicken Preparation

  1. 1

    Season the Chicken

In a bowl, mix olive oil, salt, black pepper, garlic powder, and paprika. Rub the mixture all over the chicken quarters.

  2. 2

    Cook the Chicken

Preheat your grill or oven to 375°F (190°C). Place the seasoned chicken quarters on the grill or in a baking dish and cook for about 45-50 minutes, or until the internal temperature reaches 165°F (75°C).

Jo-Jo Potatoes Preparation

  1. 3

    Prepare the Potatoes

Wash and cut the russet potatoes into wedges. In a bowl, toss the potato wedges with olive oil, salt, black pepper, garlic powder, and dried oregano until evenly coated.

  2. 4

    Cook the Potatoes

Spread the seasoned potato wedges on a baking sheet in a single layer. Bake in the oven at 375°F (190°C) for about 30-35 minutes, or until golden brown and crispy, flipping halfway through.

Toast Preparation

  1. 5

    Toast the Bread

In a skillet over medium heat, melt butter. Add the bread slices and toast them on both sides until golden brown and crispy.

Serving

  1. 6

    Plate the Dish

On a plate, serve the cooked chicken quarters alongside the Jo-Jo potatoes. Add the toasted bread and a side of sour cream for dipping.
