Preparing and par-cooking lobsters

Humanely stun and parboil

Bring a large pot of salted water (about 4 liters) to a rolling boil. While water heats, place lobsters in the freezer for 10–15 minutes to stun (optional, for humane handling). Once boiling, add lobsters headfirst, cover, and cook for 4 minutes to par-cook (they will finish cooking later). Remove lobsters and immediately transfer to an ice bath to stop cooking. Reserve 1/2 cup of the cooking water and set aside.

When cool enough to handle, split each lobster lengthwise with a heavy chef’s knife or kitchen shears: cut through the head and tail so you have two halves per lobster. Remove and discard the intestinal vein and stomach sac. Crack claws lightly with the back of a knife to expose meat but keep shells mostly intact for presentation.

Making the spicy butter base

In a large skillet over medium heat, melt 4 tablespoons of the unsalted butter. Add the minced garlic, minced shallot and grated ginger. Sauté gently for 1–2 minutes until fragrant and translucent but not browned.

Stir in the smoked paprika, hot chili paste, and red pepper flakes. Cook 30 seconds to bloom the spices. Add the par-cooking water reserved, the white wine and the concentrated seafood stock (if using). Increase heat to medium-high and simmer 3–4 minutes until liquid reduces by about one-third.

Reduce heat to low and whisk in the heavy cream, soy sauce and honey or brown sugar. Simmer gently 2–3 minutes until sauce is slightly thickened and glossy. Taste and adjust seasoning with salt and pepper.

Finishing lobster in sauce

Preheat the oven broiler (or set your oven to 450°F / 230°C if you prefer baking). Brush remaining 2 tablespoons of butter inside the lobster flesh and shells. Place lobster halves, flesh side up, in the skillet with the sauce (or transfer sauce into a shallow ovenproof baking dish and nestle lobster halves in sauce). Spoon sauce over the meat so it’s well coated.

Broil 3–5 minutes until lobster meat is fully cooked (internal temp 140–145°F / 60–63°C) and the top develops light color and sauce bubbles. If baking at 450°F, roast for 6–8 minutes. Watch closely to avoid overcooking.

Remove from oven and baste once more with pan sauce. Sprinkle chopped cilantro and sliced chives or scallions over the lobster. Serve immediately with lime wedges and crusty bread or steamed rice to soak up the spicy sauce. Add microgreens or extra cilantro as garnish if desired.

Serving & notes

Offer lime wedges for squeezing and extra red pepper flakes for those who want more heat. Leftover sauce can be chilled and used within 2 days; reheat gently and whisk in a little extra butter if it separates.
