Method
Assembly
Drain and pat mozzarella
Remove mozzarella balls from their liquid and place them on paper towels. Pat gently to remove excess moisture so the prosciutto will adhere and the bites won't be watery. About 1–2 minutes.
Prep prosciutto and basil
Lay out prosciutto slices on a clean surface. If slices are large, cut each in half lengthwise to create 12 pieces that will wrap snugly around each mozzarella ball. Place one fresh basil leaf on top of each mozzarella ball.
Wrap
Place a mozzarella ball with basil near the end of a prosciutto slice. Wrap the prosciutto around the mozzarella so the seam is on the bottom. Secure each piece with a toothpick inserted through the prosciutto and mozzarella (and basil) to hold it together.
Finish & Serving
Arrange and dress
Transfer the wrapped mozzarella to a serving platter. Drizzle the extra-virgin olive oil evenly over the bites (about 2 tablespoons). Then lightly drizzle the balsamic glaze for a sweet tangy accent (about 1 tablespoon).
Season and serve
Sprinkle flaky sea salt evenly over the bites (about 1/2 teaspoon) and finish with a light crack of freshly ground black pepper (about 1 teaspoon). Serve immediately at room temperature so the flavors are at their best.
