Method
Prep Escargot and Herb Butter
Preheat
Preheat the oven to 425°F (220°C). If using an escargot plate, place it on a baking sheet for stability.
If escargot are packed in oil or brine, drain them well and pat dry with paper towels. Set aside.
In a medium saucepan over low heat, melt the unsalted butter until fully liquid but not simmering (about 2–3 minutes).
Stir in the chopped parsley, white wine, lemon juice, Dijon mustard, salt, and freshly ground black pepper. Remove from heat and taste; adjust seasoning. If using, stir in the grated Parmesan or Pecorino.
Assemble and Bake
If you are using empty escargot shells: place a small spoonful (about 1/2 teaspoon) of the herb butter into the bottom of each shell to create a bed for the snail.
Arrange filled shells or the escargot dish on the prepared baking sheet if not already on one. If you do not have shells, place escargot in small ovenproof dishes and cover with butter.
Finish and Serve
Remove from oven using oven mitts. Let rest 1–2 minutes. If desired, sprinkle a few extra chopped parsley leaves and a light dusting of grated cheese over the top.
Transfer shells or dishes to a serving platter. Serve immediately with lemon wedges and toasted baguette slices for sopping up the garlic butter.
