Pasta Preparation

    Cook the Linguine

    Bring a large pot of salted water to a boil. Add the linguine and cook according to package instructions until al dente, usually around 8-10 minutes. Once cooked, drain and set aside, reserving about 1 cup of pasta water.

Cooking the Protein

    Sauté the Shrimp or Chicken

    In a large skillet, heat the olive oil over medium-high heat. If using shrimp, add the shrimp and cook for about 2-3 minutes on each side until pink and opaque. If using chicken, cook for about 6-7 minutes on each side until golden brown and fully cooked through. Remove from the skillet and set aside.

Making the Sauce

    Prepare the Heirloom Tomato Sauce

    In the same skillet, reduce the heat to medium and add the butter. Once melted, add the minced garlic and sauté for about 1 minute until fragrant. Then, add the diced heirloom tomatoes, salt, and black pepper. Cook for about 5-7 minutes until the tomatoes begin to break down and release their juices.

    Finish the Sauce

    Stir in the lemon juice and chopped parsley. If the sauce is too thick, add some reserved pasta water to achieve desired consistency.

Combining and Serving

    Combine Everything

    Add the cooked linguine to the skillet with the sauce, tossing to coat evenly. Add the cooked shrimp or chicken and mix well.

    Serve

    Serve the scampi immediately, garnished with additional parsley if desired.
