1. Prepare the Glass
Begin by chilling a rocks glass. Rinse it with absinthe, coating the inside, then discard the excess absinthe. This will prepare the glass for the cocktail.
2. Create the Sugar Mixture
In a separate mixing glass, place the sugar cube and add the Peychaud's bitters on top. Muddle them together until the sugar is dissolved.
3. Add the Whiskey
Pour the Sazerac Rye Whiskey into the mixing glass with the muddled sugar and bitters. Fill the mixing glass with ice and stir well until the mixture is chilled.
4. Strain and Serve
Strain the mixture into the prepared rocks glass. Be careful not to include any ice.
