Method
Preparation of Caviar

Rinse the Roe
Gently rinse the paddlefish roe under cold filtered water in a fine-mesh sieve to remove any impurities.

Mix with Salt
In a small bowl, combine the rinsed roe with the kosher salt. Stir gently to coat the roe evenly.

Curing
Transfer the salted roe to a non-reactive container, cover, and let it cure in the refrigerator for 24 hours.

Rinse Again
After curing, rinse the roe once more under cold filtered water to remove excess salt.

Store
Store the prepared caviar in an airtight container in the refrigerator, where it can be kept for up to 2 weeks.
Serving the Caviar

Prepare Serving Plate
Arrange the crackers or blinis on a serving plate.

Add Caviar
Using a small spoon, place a generous scoop of the cured paddlefish caviar on top of each cracker or blini.

Garnish
Top each serving with a dollop of sour cream and a sprinkle of chopped chives.

Serve with Lemon
Place lemon wedges around the serving plate for an extra zest.
