Clean the Mussels
Rinse the mussels under cold water, scrubbing the shells to remove any dirt or debris. Remove the beards (the fibrous strands) by pulling them away from the shell.

Add the Mussels and Wine
Pour the dry white wine into the pot and increase the heat to high. Once the wine starts to simmer, add the cleaned mussels to the pot. Cover the pot with a lid and cook for about 5-7 minutes, or until the mussels have opened up.

Serve
Once the mussels are opened, remove them from heat. Discard any mussels that remain closed. Serve the mussels in a bowl with the cooking liquid poured over them, accompanied by the grilled sourdough for dipping.
