Hanger Steak

    Prepare the Steak

    Season the hanger steak with salt and black pepper on both sides.

    Sear the Steak

    In a large skillet, heat olive oil over medium-high heat until shimmering. Add the steak and sear for about 4-5 minutes on each side for medium-rare, or until desired doneness.

    Make the Sauce

    Remove the steak from the skillet and let it rest. In the same skillet, reduce the heat to medium and add butter. Once melted, add minced shallots and sauté until translucent, about 2 minutes. Carefully add cognac and cook for 1 minute, scraping up any browned bits from the bottom. Add heavy cream and let simmer until slightly thickened, about 3-5 minutes. Season sauce with salt and pepper.

    Slice the Steak

    Slice the hanger steak against the grain and serve with sauce drizzled over.

Mashed Potatoes

    Boil the Potatoes

    In a large pot, add the quartered potatoes and cover with cold water. Bring to a boil and cook until tender, about 15-20 minutes.

    Mash the Potatoes

    Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, and black pepper. Mash until smooth and creamy.

Sautéed Spinach

    Sauté the Spinach

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

    Add Spinach

    Add fresh spinach to the skillet in batches, stirring until wilted. Season with salt and black pepper to taste.
