    Prepare the Goat Cheese Spread

    In a mixing bowl, combine the goat cheese, cream cheese, chopped thyme, minced garlic, olive oil, salt, and black pepper. Mix well until the ingredients are fully incorporated and the mixture is smooth.

Roasted Tomatoes

    Roast the Tomatoes

    Preheat your oven to 400°F (200°C). Place the halved Roma tomatoes on a baking sheet. Drizzle with olive oil, and season with salt and black pepper. Roast in the preheated oven for about 25 minutes, or until the tomatoes are soft and slightly caramelized. Remove from the oven and drizzle with balsamic vinegar.

Grilled Sourdough

    Grill the Sourdough

    Brush both sides of each slice of sourdough bread with olive oil. Heat a grill pan or outdoor grill over medium heat. Grill the bread for 2-3 minutes on each side, or until grill marks appear and the bread is toasted.

Assembly

    Assemble the Bruschetta

    Spread a generous layer of the goat cheese mixture on each slice of grilled sourdough. Top with the roasted tomatoes. Serve immediately and enjoy your Goat Cheese Bruschetta!
