For the Flourless Chocolate Torte

    Preheat the Oven

    Preheat your oven to 375°F (190°C) and grease a 9-inch round cake pan with butter or line it with parchment paper.

    Melt Chocolate and Butter

    In a medium saucepan, melt the dark chocolate and unsalted butter over low heat, stirring frequently until smooth. Remove from heat and let cool slightly.

    Mix in Sugar and Eggs

    Stir in the granulated sugar into the melted chocolate mixture until combined. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

    Combine Dry Ingredients

    In a separate bowl, whisk together the cocoa powder and salt. Gradually add this mixture to the chocolate mixture, stirring until no dry ingredients remain.

    Bake the Torte

    Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for 25-30 minutes, or until the edges are set and a toothpick inserted into the center comes out with moist crumbs.

    Cool the Torte

    Remove the torte from the oven and let it cool in the pan for 10 minutes. Then, carefully transfer it to a wire rack to cool completely.

For the Red Wine Chocolate Ganache

    Heat Heavy Cream and Red Wine

    In a small saucepan, heat the heavy cream and red wine over medium heat until it starts to simmer. Remove from heat.

    Add Chocolate

    Add the dark chocolate to the hot cream and wine mixture. Let it sit for a minute, then stir until the chocolate is melted and the ganache is smooth.

    Cool the Ganache

    Let the ganache cool at room temperature until it thickens slightly, about 30 minutes.

For the Whipped Cream

    Whip the Cream

    In a medium bowl, combine the heavy cream, powdered sugar, and vanilla extract. Using an electric mixer, whip until soft peaks form.

    Serve slices of the flourless chocolate torte topped with a generous drizzle of red wine chocolate ganache and a dollop of whipped cream.
