Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Set the bowl over a pot of simmering water (double boiler method) and stir until completely melted. Remove from heat and let it cool slightly.

Whip the Cream
In a large mixing bowl, pour the heavy cream and add the vanilla extract. Using an electric mixer, whip the cream until soft peaks form. Be careful not to overwhip; set aside.

Beat the Egg Whites
In another clean bowl, add the egg whites and a pinch of salt. Using an electric mixer, beat the egg whites until soft peaks form. Gradually add the sugar while continuing to beat until stiff peaks form.

Combine Ingredients
Gently fold the melted chocolate into the whipped cream until fully incorporated. Then, carefully fold in the beaten egg whites in three additions. Make sure to maintain the airy texture.

Chill the Mousse
Spoon the mousse mixture into serving cups or bowls. Cover with plastic wrap and refrigerate for at least 2 hours or until set.
